Minced Pork Omelet - Another great way to prepare omelets!
My mom used to make minced pork omelet for me and I suddenly had a craving for it. So I dashed to the nearest supermarket to buy some minced pork and chinese parsley! All right all right… I did not dash. I drove. Minced pork omelet is an easy dish to prepare and a comfort food for me. La la dee dah…
Ingredients (for 4 servings):
- 1/2 lb, minced pork
- 1/2 tsp salt
- 1/2 tsp white pepper
- 1/2 cup, chinese parsley, chopped
- 4 eggs, beaten
Method:
1. Heat up 2 tbsp of vegetable oil in a saucepan or frying pan. Medium heat. I used a wide-based saucepan as the height of the saucepan will reduce any oil splatter on my stove top. This is also because I want my omelets to form a nice round shape.
2. While the oil is being heated up, season the minced pork with salt and pepper.
3. Add Chinese parsley and 4 beaten eggs and mix well.
4. Transfer the mixture to the saucepan or frying pan. Allow the egg and minced pork to cook.
5. When the egg is almost cooked (solidified), use a spatula to carefully flip the omelet to brown the other side.
6. Cut the minced pork omelet into 4 pieces and serve with plain white rice, congee or even with bread (as a sandwich).

It’s frittata the chinese way-you’ve just substituted sausage/ham with minced pork; and spinach/onion with parsley! Made mine with “popeye” spinach and onions, before the spinach E-Coli incident.
