Dried Shrimp
Dried shrimp is one of my must-have cooking ingredients. You can find it in the refrigerated section of the supermarket and they come in sizes of small, medium, large and extra large!
I usually buy the medium ones as they look the nicest and most presentable in a dish.
When I buy dried shrimp, after I come home from the local Chinese supermarket, I will go right ahead to give them a gentle stir fry seperately with some garlic and ginger. The garlic can be crushed whole, and the ginger can be in slices or thin strips.The garlic and ginger add tons of flavor to the oil and infuses into the dried shrimp.
I then let them cool and later transfer them to a glass bottle and freeze them. In this way, when I need to use them, they are ready for me.
I use them when I cook Chinese soups and when I stir fry vegetables like long bean, snow peas, broccoli.
The taste of dried shrimp can be quite strong, so it is an individual preference whether to eat it, or put it aside. It’s ok if it is not eaten as the flavour of the shrimp will already be in the soup and the vegetables.
