Stir Fried Spaghetti With Black Peppered Beef

Stir Fried Spaghetti with Black Pepper Beef Image

I got this spaghetti recipe from a cookbook my mom bought for me. She was so worried that I would die of hunger, living away from her that she bought me a series of cook books meant for Filipino maids. LOL!

I don’t think they are on sale at the Popular Bookstore in Singapore anymore. Last time my mom checked, she said that there aren’t many good and easy-recipe cook books available nowadays. Most of them are wordy and targeted at the more experienced cooks.

Luckily for me, the ingredients in this book are easily available, even in the Bay Area. I added cut green chili to the original spaghetti recipe for some heat and also tweaked the original recipe by adding a step that says to add some pasta water to the stir-fried spaghetti if it looks too dry.

The beef I used is “Hong Kong Fat Beef for Hot Pot” (from Ranch99), the same beef I used in my stir fried beef with broccoli and yellow pepper dish.

Ingredients (serves 2):

- 1/3 lb thinly sliced beef (about 150 g)
- 2 servings spaghetti
- 1/2 small onion (yellow or white), shredded
- 1 tsp garlic, minced
- 2 small red or green chili, cut (optional)
- black pepper

Marinade:

- 1/2 tsp black pepper
- 1/2 tbsp light soy sauce
- 1 tsp cornflour
- 2 tbsp water

Seasoning:

- 1/2 tbsp light soy sauce
- 1/2 tbsp dark soy sauce

Method:

1. Toss beef in marinate and set aside for at least 1/2 hour.

2. Cook spaghetti according to packet instructions.

3. Heat 2 tbsp vegetable oil in a frying pan. Medium heat. When oil is hot enough, stir fry onions until the color changes. Push to one side of the pan. Add garlic, chili and beef and stir fry until the color of beef changes.

4. Add spaghetti, seasoning and black pepper. Toss well to mix.

5. (This is my extra step) If you find the spaghetti too dry, add some pasta water (the water you had used to cook your spaghetti in), then toss again.

6. Transfer to plate and serve.

Good that you mention what is “Hong Kong Fat Beef for Hot Pot”. Now I know what it can be used for :)
Oh, if you looking for red chilli padi, it’s not located at the same section as those normal chilli at the vegetable section. Check the frozen section behind the tofu, anchovy, dried shrimp etc. in the Cuper.R99. No guarantee, but I saw it in the frozen section in Hostetter R99.

[…] I wanted to cook chicken with spaghetti the other day so I went around surfing for a chicken spaghetti recipe, but all I could find were stuff on chicken casseroles. I was thinking of something simple like my stir fried spaghetti with black peppered beef, or my spaghetti with shrimp and anchovies. […]
