Steamed Fish

I bought a huge piece of fish (1.11 lb) from the supermarket that day. It’s called a Canadian Wild Yellow Eye Steak. Quite expensive, I must say at $7.99/lb, but still cheaper that wild-caught salmon.

I always ask the fishmonger which is the best fish that day for steaming and that day he recommended me to buy the Canadian Wild Yellow Eye Steak.

I asked the fishmonger how I should steam this fish, and here’s what he said…

1. Put a few slices of ginger and a few short strips of spring onion on the plate (to prevent the fish from sticking to the plate upon steaming).

2. Place the fish onto the plate and cut slits on the fish.

3. Sprinkle some salt on the fish and in between the slits.

4. Stuff a few strips of ginger and spring onion into the slits (see picture below).

5. Place fish into a steamer and steam the fish for about 15 mins.

6. While the fish is being steamed, heat up some vegetable or peanut oil (peanut oil has a high heating point) to a high temperature.

7. When the fish is cooked, drizzle the hot oil onto the fish.

8. Drizzle some light soy sauce to the fish when cooked.

9. Serve immediately with steamed jasmine white rice.

I skipped Steps 6 and 7 because I find that the fish can taste just as good without the oil. Drizzling the fish with hot oil is a Cantonese way of cooking. I am a Teochew.

    Where did you buy your fish from ? Has it been de-scaled (automatically) by the fishmonger ? Is this pure fillet or still with bones ? Do you think it will work with frozen fish ? Oops, I asked so many qns because I hardly work with fish here. It’s too messy to deal with. Too much work and sweat !
    But your recipe is really simple to try, if I can easily get hold of fish. Wonder if tilapia fillet will work…

    Hi Tigerfish, I bought the fish from Ranch99. It was mostly descaled, but when I washed the fish, there were still some bits of scales stuck to it. Grrr…

    I haven’t worked with tilipia fish before. Need to ask the fish guy if that can be steamed :) Give it a go and let me know!
