Stir Fried Eggplant with Minced Pork
It’s funny how the very first time I cooked eggplant, I thought I could just pour some oil on the frying pan and stir fry the eggplant. When I did that, the eggplant started soaking up the oil very quickly and I had to keep adding oil! When the eggplant did finally cook (i.e. become soft), I ended up with a very oily and soggy dish!
I later found out that the trick is to first steam the eggplant to soften it. Then I can stir-fry the eggplant with minced pork and chilli oil to add flavor to the dish. I succeeded!
Ingredients (for 2-3 servings):
2 Oriental eggplants
1 tbsp chilli oil
1 tbsp crushed garlic
1/2 lb minced pork
1 tbsp light soy sauce
2 tbsp hoisin sauce
1 tbsp Chinese black vinegar
3/4 cup Chicken broth
2 tsp cornstarch dissolved in cold water
1 tbsp Minced green onion (green part only)
Method:
1. Trim blossom ends of eggplants. Cut into halves lengthwise. Cut each half in ½” -thick diagonal slices.
2. Steam eggplants until tender. Set aside.
3. Add oil into frying pan or wok. Medium heat.
4. Add garlic and stir for about 10 seconds until you smell the fragrance of the garlic and chilli oil.
5. Add ground pork, light soy sauce, and hoisin sauce and stir-fry until pork is browned.
6. Add broth, vinegar and eggplants, toss lightly to blend flavors and heat through. Season to taste with more soy sauce.
7. Mix cornstarch with water and stir into pork mixture. If you want a thicker gravy, then add more cornstarch (already dissolved in water).
8. Add green onion and stir-fry 5 seconds.
9. Serve with plain white steamed rice.

[…] Thanks to a previous eggplant recipe I tried, I now have some Lee Kum Kee chili oil in my pantry for use in this shrimp in chili oil stir-fry recipe. […]

[…] So I searched around for another eggplant recipe I can try, apart from the first one (stir-fried eggplant with minced pork) which I managed quite successfully. […]

I made this dish. I am a white guy from California and it turned out fine! I added some sesame seeds at the end. I also like to add chopped red bell pepper, a few slices of jalapeno pepper. I like the spicy taste.
Also I only slice the eggplants two-thirds thru crosswise, so the eggplants stay together after steaming for transfering. Later they come apart nicely when you eat it on a dish… yummy!
