C is for Cookie

I prefer crunchy to soft cookies so I got this idiot-proof cookie recipe from my friend Angela. I managed to get perfect crunchy cookies the first time I tried the recipe. I also did not need a mixer, which I do not have, so everything was done manually.


Ingredients:

- 250g butter at room temperature
- 150g fine white sugar
- 2 large egg yolks
- 290g self-raising flour
- 3/4 cup raisins, chopped
- 100g cornflakes, crushed

Method:

1. Using a wooden spoon, cream butter and sugar until white.

2. Add egg yolks and mix well.

3. Pour in flour and mix well.

4. Add in chopped raisins.

5. Add crushed cornflakes to pastry and mix well.

6. Arrange cookies on a greased baking tray or baking sheet.

7. Bake in a pre-heated oven at 180 degree celcius, for 12-15 mins for small cookies and 18-20 mins for large cookies.

The first time I made this, I used half of all the ingredients. That worked too. So now I can sing:

“C” is for cookie that’s good enough for me,
“C” is for cookie that’s good enough for me,
“C” is for cookie that’s good enough for me,
Oh! cookie, cookie, cookie starts with “C”!

    I used to watch Sesame Street as a kid. I love Cookie Monster and also Ernie when he says “Hey Bert!”

    Oh. The “Just Add Water” type? I tried that before. It tasted a bit wierd. You know… you don’t get the OOMPH like when you eat a mudpie at NYDC.
