Cashew Nut Cookie - Cookie Advice Needed
Help! I need somebody. Help! Can anybody tell me if cashew nut cookies contain crushed cashew nuts inside?
During Chinese New Year, cashew nut cookies are readily available in supermarkets. However, they are usually very rich and buttery, so I thought I could make my own version of cashew nut cookies using the same method which I used for the raisin cookies and see how they turn out. The measurements for the ingredients were gotten from nutsonline.com.
Ingredients:
- 1 tsp pure vanilla extract
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 cup fine sugar
- 2 large egg yolks
- 2 cups sifted self raising flour
- 4 dozen jumbo cashew nuts (whole)
Method:
1. Using a wooden spoon, cream butter and sugar until white.
2. Seperate the egg yolks from the white. Add egg yolks and vanilla extract and mix well.
3. Pour in flour and mix well.
4. Arrange cookies on a greased baking tray or baking sheet.
5. Brush cookies lightly with egg white. (This is to give the cookie surface a shine when baked.)
6. Bake in a pre-heated oven at 180 degree celcius, for 12-15 minutes for small cookies and 18-20 minutes for large cookies.
7. Cool cookies on wire racks and store in an airtight container.
My conclusion:
The cookies turned out a bit flat, not in taste, but in appearance. I had used multi-purpose flour instead of self-raising flour, so I added 1 tsp of baking powder. I guess that was too much.
I had also skipped a step (not mentioned above). Between step one and two, I was supposed to add finely chopped salted cashew nuts and mix well. However I don’t remember tasting cashew nuts inside the cookies when I bought them from the supermarkets.
Can any cookie lovers out there advise?

I am a cookie lover but not a cookie-baker, so can only give advice on the “eat” part. I’ve tasted both varieties-those with cashews inside the cookies and those that look like yours.

Haha… I am the “kia-su” perfectionist. The cookies have to pass my personal QA test first before I decide if they can be given away as a gift. I hope I won’t get fat with all the testing!!! Thanks for the note!

I guess I’m missing out because I’ve only had almond cookies.

Almond cookies are nice too, but I don’t think you put crushed almonds in those. Not from the almond cookie recipes I’ve seen. :)
